This recipe serves two or three.



  1. Add the mashed avocados to warm consommé and blend thoroughly.
  2. Cook slowly, stirring constantly until the soup comes to a boil.
  3. Remove from the fire immediately and pour over the cubed avocado in the soup bowls.
  4. Put a dollop of lightly salted whipped cream or a little evaporated milk on top of the soup.
